Ingredients:

  • 5 eggs
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • generous pinch of salt and pepper
  • 8 slices bacon, fried
  • 8 oz crescent rolls refrigerated
  • 1 cup cheddar cheese shredded
  • 1 egg + 2 Tbsp of water (for egg wash, optional)

Instructions:

  1. Preheat oven to 375 F degrees. In a bowl beat the eggs with the chopped peppers, salt and pepper.
  2. Scramble the mixture and set aside.
  3. Lay out the crescent rolls on a parchment paper, with the short ends overlapping and the top of the triangle pointing outward (the dough should kind of look like a star).
  4. Lay a piece of bacon over each crescent roll.
  5. Add half of the cheese around the ring.
  6. Spoon the scrambled eggs around the base of the ring and top with the remaining cheese.
  7. Fold the crescents inward, over the eggs, and try to tuck them under the center.
  8. Brush the dough with an egg wash (1 egg + 2 tablespoons of water combined)
  9. Bake for 20 minutes or until the crescents are cooked and golden brown.
