- 1/2 head cauliflower, cut into bite-sized florets
- 12 green beans, trimmed and cut into 1 inch pieces
- 2 teaspoons curry powder, divided
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon minced ginger
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 cup raw cashews, soaked in 1 cup water for 1 hour
- 3 tablespoons tomato paste
- 1 (15 ounce) can coconut milk, divided
- 1/2 cup frozen peas, thawed
