KETO BREAKFAST “POTATOES”
These Keto Breakfast “Potatoes” are a great low-carb alternative to starchy potatoes. The turnips have a very similar taste and texture so you’ll never know the difference.
Ingredients:
- 1 large turnip, peeled and diced (270g)
- 1/4 onion, diced (56g)
- 3 slices bacon
- 1 tablespoon olive oil
- 1/2 teaspoon each of paprika, garlic powder, salt, and pepper
- 1 green onion, sliced, for garnish
- Parsley, for garnish
Instructions:
- Add the oil to a large skillet over medium high heat. Add in the turnips and spices. Cook 5-7 minutes stirring occasionally.
- Add in the onion and cook 3 minutes until it starts to soften. Chop the bacon into small pieces and add to the skillet. Continue to cook anoth 5-7 minutes until the bacon is crispy.
- Top with green onion and parsley before serving.
