Breakfast Pizza
Ingredients:
- 2 tablespoons extra virgin olive oil
- 2 small new potatoes, diced
- 1/4 cup diced green bell peppers
- 1/4 cup diced red bell peppers
- 2 teaspoons minced thyme
- 3 rashers cooked bacon, chopped
- 1 cup part skim shredded mozzarella
- 3 large eggs, cracked into individual ramekins
- 1 (8 ounce) store bought pizza dough, room temperature
- salt and pepper to taste
