Whole30 Power Breakfast Bowls
Ingredients:
- 1 tsp avocado oil or ghee
- 1 egg
- 1-2 roasted garlic breakfast sausage (sub your favorite leftover protein)
- ½ cup oven roasted cauliflower rice
- ½ cup roasted brussels sprouts
- ½ cup sweet potato wedges
- ½ avocado, sliced
- For serving: hot sauce + fermented veggies (kraut)
- For serving: hot sauce + fermented veggies (kraut)
Instructions:
- Heat a small skillet with 1 tsp avocado oil or ghee for 2 minutes, then add the egg. Fry it until the white is cooked through but the yolk is still slightly runny, about 3-4 minutes.
- Throw everything else besides the avocado in a skillet or the microwave to warm together.
- Top with sliced avocado, hot sauce, and your favorite fermented veggies or kraut!
