Chewy Chocolate Chip Granola Bars

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (180°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix together the oats, flour, brown sugar, salt, and cinnamon.
  3. In a separate bowl, whisk together the melted butter, honey, and vanilla extract.
  4. Pour the wet mixture over the dry mixture and stir until well combined.
  5. Add the chocolate chips and nuts (if using) and stir again.
  6. Spoon the mixture into the prepared pan and press it down evenly with a spatula.
  7. Bake for 25-30 minutes, or until the edges are golden brown.
  8. Let the granola bars cool in the pan for 10 minutes, then use the parchment paper to lift them out and place them on a wire rack to cool completely.
  9. Cut the granola bars into desired sizes and enjoy!
