  • Instructions: In a bowl, mix together the flour, sugar, baking powder, and salt. Add the egg, milk, and vegetable oil, and mix well. Heat a skillet over medium heat. Pour about 1/4 cup of batter into the skillet for each pancake. Add a handful of blueberries on top of the pancake batter. When the edges of the pancake start to dry and the surface starts to bubble, flip the pancake over using a spatula. Cook for another minute or until golden brown. Serve with additional blueberries and maple syrup if desired.

  • Ingredients: 1 egg, 2 egg whites, 1/2 cup chopped vegetables (such as bell peppers, onions, spinach, or tomatoes), 1 tablespoon grated cheese, salt, pepper, 1 teaspoon olive oil
  • Instructions: Heat the olive oil in a skillet over medium-high heat. Add the vegetables and cook until slightly softened. In a bowl, beat the egg and egg whites together. Season with salt and pepper. Pour the egg mixture over the vegetables in the skillet. Using a spatula, lift and fold the omelet in half. Sprinkle the grated cheese on top of the omelet. Cook for another 1-2 minutes, or until the cheese is melted and the eggs are cooked through. Serve hot.

  • Instructions: In a blender, mix together the banana, frozen berries, almond milk, protein powder, and honey until smooth. Pour the smoothie into a bowl. Add your favorite toppings on top of the smoothie. Enjoy!

  • Ingredients: 1 whole wheat tortilla, 1/4 cup black beans, 1 egg, 1/4 cup grated cheddar cheese, salsa, avocado, salt, pepper, olive oil
  • Instructions: Heat the black beans in a skillet over medium heat. In another skillet, heat the olive oil over medium-high heat. Beat the egg and season with salt and pepper. Pour the egg into the skillet and cook until set. Place the tortilla on a plate. Add the black beans and egg on top of the tortilla. Sprinkle the grated cheddar cheese on top. Microwave the salsa for 20 seconds and spoon over the cheese. Add sliced avocado on top of the salsa. Roll up the tortilla into a burrito. Serve hot.
