Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/4 cup shredded coconut

Instructions

  1. In a mixing bowl, combine the rolled oats, peanut butter, honey, chocolate chips, vanilla extract, and salt.
  2. If you like, you can also add shredded coconut to the mixture.
  3. Stir everything together until well combined.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  5. Place the energy balls on a plate or baking sheet and refrigerate them for at least 30 minutes before serving.
  6. Store any leftovers in an airtight container in the refrigerator for up to a week.
