Crispy Parmesan Zucchini Bites: The Perfect Party Appetizer

Ingredients:

  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Olive oil cooking spray

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spray with olive oil cooking spray.
  2. Cut the zucchini into bite-sized pieces.
  3. In a shallow bowl, mix together breadcrumbs, parmesan cheese, oregano, garlic powder, paprika, salt, and pepper.
  4. In another shallow bowl, beat the eggs.
  5. Dip the zucchini pieces into the beaten eggs, then roll them in the breadcrumb mixture to coat evenly.
  6. Place the coated zucchini bites onto the prepared baking sheet.
  7. Spray the zucchini bites generously with cooking spray.
  8. Bake for 20-25 minutes, or until golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
  10. Enjoy!
