Ingredients:
- 4 chicken breasts
- 2 cups broccoli florets
- 2 medium-sized potatoes, chopped
- 2 medium-sized carrots, chopped
- 1 medium-sized zucchini, chopped
- 1 red onion, chopped
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- In a small bowl, mix together olive oil, minced garlic, thyme, oregano, smoked paprika, salt, and pepper.
- Place the chicken breasts in the center of a large baking dish and arrange the vegetables around them.
- Drizzle the olive oil mixture over the chicken and vegetables, making sure everything is evenly coated.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
