Instructions
1. In a small bowl, whisk together soy sauce, honey, cornstarch, sesame oil, ginger, red pepper flakes (if using), and 1/2 cup water. Set aside.
2. In a large skillet or wok, heat 1 tablespoon of olive oil over high heat. Season chicken with salt and black pepper, add it to the skillet and cook for 6-7 minutes, stirring constantly, until browned and cooked through. Remove from skillet and set aside.
3. In the same skillet, heat 1 more tablespoon of olive oil. Add broccoli, bell pepper, onion, and garlic. Season with salt and black pepper and stir-fry for 4-5 minutes, until vegetables are crisp-tender.
4. Return chicken to the skillet, stir well, and pour in the soy sauce mixture. Bring to a boil and cook for 2-3 minutes until the sauce is thickened and the chicken and vegetables are coated.
5. Serve hot, garnished with sesame seeds and chopped scallions if desired.
