Easy One-Pot Chicken and Rice Recipe for a Quick Weeknight Dinner

This easy one-pot chicken and rice recipe is the perfect meal to enjoy after a long day, and you only need one pot to make it! Tender chicken and fluffy rice cooked together in a savory broth create a flavorful dish that will satisfy your taste buds and make cooking dinner a breeze.
Ingredients
- 1 lb. boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 1/2 cups long-grain white rice, rinsed and drained
- 1 can (14.5 oz.) diced tomatoes, drained
- 1 can (14 oz.) chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp. dried thyme leaves
- Salt and pepper to taste
- 2 tbsp. olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the chicken and cook, stirring occasionally, until browned on all sides, about 5 minutes.
- Remove the chicken from the pot and set aside.
- Add the onion and garlic to the pot and cook until softened, about 3 minutes.
- Add the rice, thyme, salt, and pepper to the pot and stir to combine.
- Add the chicken broth and diced tomatoes to the pot and stir to combine.
- Bring the mixture to a simmer and cook for 5 minutes.
- Add the chicken back to the pot and stir to combine.
- Cover the pot and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with fresh parsley if desired, and serve hot.
