Quick and Delicious Lunch: Soba Noodles with Spicy Peanut Sauce
Ingredients:
- 8 oz soba noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tbsp honey
- 1 tbsp sriracha sauce
- 2 cloves garlic, minced
- 1/4 cup water
- 2 green onions, sliced
- 1/4 cup chopped peanuts
Directions:
- Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions.
- While the noodles are cooking, prepare the sauce. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha sauce, garlic, and water until smooth.
- Drain the cooked noodles and rinse under cold water to stop the cooking process. Drain again and transfer to a large bowl.
- Pour the peanut sauce over the noodles and toss to coat.
- Garnish with sliced green onions and chopped peanuts.
Note: This recipe makes about 4 servings. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
