Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/2 cup Kalamata olives, pitted and chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons fresh lemon juice
- 1/4 cup extra-virgin olive oil
- 1 teaspoon honey
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
- 4 chicken breasts, grilled and sliced
Instructions:
- In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover and simmer until the quinoa is tender and all the water is absorbed, about 15-20 minutes.
- In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, red onion, olives, feta cheese, parsley, and mint. Mix well.
- In a small bowl, whisk together the lemon juice, olive oil, honey, garlic, salt, and black pepper. Add to the salad and toss to combine.
- Grill the chicken breasts until cooked through, about 5-6 minutes per side. Slice the chicken and add to the salad.
- Serve the salad immediately or refrigerate until ready to serve.
