Greek-Inspired Stuffed Chicken with Lemon and Feta

Stuffed chicken with lemon and feta

Ingredients:

  • 4 chicken breasts
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil

Directions:

  1. Preheat oven to 375°F. Lightly oil a baking dish.
  2. In a medium bowl, combine feta, parsley, dill, oregano, garlic, salt, pepper, lemon zest, and lemon juice. Mix well.
  3. Using a sharp knife, cut a pocket horizontally into the thickest part of each chicken breast. Be careful not to cut through the other side.
  4. Stuff each pocket with 1/4 of the feta mixture.
  5. Place the stuffed chicken breasts in the prepared baking dish. Drizzle with olive oil and sprinkle with additional salt and pepper if desired.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and no longer pink.
  7. Serve hot with a side salad and crusty bread.
