Ingredients

  • 4 chicken breasts
  • 1 red onion
  • 2 bell peppers
  • 2 zucchinis
  • 2 cups cherry tomatoes
  • 4 cloves of garlic, minced
  • 3 tbsp olive oil
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and one teaspoon of dried basil and oregano each.
  3. Cut the red onion, bell peppers, and zucchinis into larger pieces than the chicken. Halve the cherry tomatoes.
  4. In a large mixing bowl, mix the vegetables, garlic, olive oil, one teaspoon of dried basil and oregano each, salt, and pepper.
  5. Spray a large baking sheet with cooking spray and arrange the chicken and vegetables evenly on the tray.
  6. Bake for 30 minutes, stirring halfway through, or until chicken is cooked through and the vegetables are tender.
