Spinach & Egg Wrap

Ingredients:

  • 1 large tortilla
  • 2 large eggs
  • 1 cup fresh spinach leaves
  • 1/4 cup shredded cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a non-stick pan over medium heat.
  2. Add the spinach leaves and sauté until wilted.
  3. In a separate bowl, beat the eggs and season with salt and pepper.
  4. When the spinach is ready, pour in the eggs and cook, stirring occasionally, until set.
  5. Place the tortilla on a plate and sprinkle the shredded cheese on top.
  6. Top with the spinach and egg mixture and roll up the tortilla tightly.
  7. Cut in half and serve.
