Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1 tablespoon olive oil
- 3 cups marinara sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil for garnish
Instructions:
- Preheat the oven to 375°F.
- Season the chicken breasts with salt and pepper to taste.
- In a shallow dish, combine the breadcrumbs, Parmesan cheese, and flour.
- Dip each chicken breast in the beaten eggs, then coat in the breadcrumb mixture, pressing the mixture onto the chicken to help it adhere.
- In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.
- Add the chicken breasts and cook for about 3-4 minutes per side until golden brown. Remove the chicken from the pan and set aside.
- Add the marinara sauce to the same pan, scraping up any browned bits from the bottom of the pan.
- Place the chicken breasts back in the pan, spooning some of the sauce over the top of each breast.
- Sprinkle shredded mozzarella cheese over each chicken breast.
- Transfer the pan to the oven and bake for 20-25 minutes until the cheese is melted and the chicken is cooked through.
- Garnish with chopped fresh basil and serve hot.
