Ingredients
- 4 salmon fillets (6-ounce each)
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 lemon, zested and juiced
- Salt and black pepper, to taste
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
- Salt and black pepper, to taste
Directions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the melted butter, minced garlic, chopped parsley, lemon zest, and lemon juice. Season with salt and black pepper, to taste.
- Place a cast iron skillet over medium-high heat and brush it with some olive oil. Season the salmon fillets with salt and black pepper, to taste, and place them skin-side down in the skillet. Cook for about 3 minutes, until the skin is crispy.
- Spoon the garlic butter mixture over the salmon fillets, making sure they are fully coated. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the salmon is cooked through.
- Meanwhile, in a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, until the quinoa is tender and the liquid is absorbed.
- Remove the quinoa from the heat and stir in the chopped parsley, chopped cilantro, lemon juice, and olive oil. Season with salt and black pepper, to taste.
- Serve the garlic butter salmon hot with the lemon herb quinoa on the side.
