Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. In a large mixing bowl, combine flour, baking powder, salt and sugar.
  2. In a separate bowl, beat together milk, egg and melted butter.
  3. Pour the milk mixture into the flour mixture and whisk until well combined.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat. Scoop 1/4 cup batter onto the griddle for each pancake.
  5. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on the other side.
  6. Repeat with remaining batter.


Notes:

  • For a fluffier pancake, separate the egg and whip the egg white until stiff peaks form, then fold it into the batter before cooking.
  • Feel free to add your favorite mix-ins, such as blueberries, chocolate chips or nuts.
