A Refreshing and Colorful Dish Perfect for Summer!
Ingredients
- 1 head of romaine lettuce, chopped
- 1 can of black beans, rinsed and drained
- 1 can of corn, drained
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 red onion, diced
- 1 lime, juiced
- 1/4 cup of cilantro, chopped
- 1/2 teaspoon of cumin
- 1/2 teaspoon of chili powder
- Salt and pepper, to taste
- Tortilla chips for serving
Instructions
- In a large bowl, combine chopped romaine lettuce and diced red onion.
- Add rinsed and drained black beans, drained corn, and diced red bell pepper to the bowl.
- Stir in diced avocado, lime juice, chopped cilantro, cumin, chili powder, and salt and pepper to taste.
- Toss everything together until well combined.
- Refrigerate for 10-20 minutes to let the flavors meld together.
- Serve chilled with tortilla chips on the side.
