Easy and Delicious Chicken Fajitas for a Quick Weeknight Dinner

Ingredients
- 4 chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- 2 tbsp of fajita seasoning (store-bought or homemade)
- Tortillas
- Lime wedges, chopped cilantro, sour cream and shredded cheese for toppings (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add chicken strips and cook until no longer pink, about 5 minutes. Remove from the skillet and set aside.
- Add another tablespoon of olive oil to the same skillet, then add the peppers, onions, and garlic. Cook until the vegetables are al dente, about 5 minutes.
- Return the chicken to the skillet, and stir in the fajita seasoning until everything is coated and heated through.
- Warm the tortillas in the microwave or on a skillet. Serve with the chicken and vegetable mixture.
- Top with lime wedges, chopped cilantro, sour cream, and shredded cheese, if desired.
