Spice Up Your Weeknight Dinner with this Flavorful Vegetable Stir Fry Recipe
Are you tired of having the same old boring dinners during the week? Well, mix things up with this delicious and easy-to-make vegetable stir fry recipe!
Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup mushrooms, sliced
- 1 tablespoon soy sauce
- 1 tablespoon ginger, grated
- 1 teaspoon red pepper flakes
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 1/4 cup vegetable broth
- Salt and black pepper to taste
- Rice or noodles, for serving
Directions:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the onion and garlic, and sauté until onion is translucent.
- Add the bell peppers, zucchini, and yellow squash. Sauté for 5-7 minutes or until the veggies are tender-crisp.
- Add the mushrooms and continue sautéing for another 3-4 minutes.
- In a small bowl, mix together the soy sauce, ginger, red pepper flakes, honey, cornstarch, and vegetable broth. Stir to combine well.
- Add the sauce to the skillet with the veggies, stirring until the sauce has thickened and coated the veggies. If you find the sauce too thick, feel free to add more vegetable broth to thin it out slightly.
- Season to taste with salt and black pepper.
- Serve hot over rice or noodles, and enjoy!
