This easy and delicious snack cake is topped with blueberries and a crumb topping.

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup cold butter
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 2 eggs
  • 2 cups blueberries, fresh or frozen

Instructions:

  1. In a mixing bowl, combine the flour, sugars, and cinnamon. Cut in the butter until the mixture is crumbly. (If you have a food processor, use it here.) Set aside 3/4 cup mixture for the topping.
  2. Add the baking powder, buttermilk, and eggs to the remaining mixture. Beat gently until combined. Spread in a greased 9×13 baking dish. Sprinkle with the blueberries. Top with the reserved crumb mixture. Bake at 350 degrees for 35-40 minutes. Cool slightly before serving. Store in a sealed container. Makes 15 squares.
