Ingredients:

  • 2 large boneless chicken breasts (about 1 ½ – 2 lbs), cut into bit size pieces
  • 1 tbps olive oil
  • 1 garlic clove, minced
  • ¼ tsp ginger
  • ½ tsp crushed red pepper flakes
  • ¼ cup apple juice
  • ⅓ cup light brown sugar
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • ½ cup water
  • ¼ cup soy sauce

Instructions:

  1. In a bowl whisk together garlic, ginger, red pepper flakes, apple juice, brown sugar, ketchup, cider vinegar, water and soy sauce.
  2. Heat oil in large skillet over medium high heat and cook chicken until no longer pink, about 10-15 minutes.
  3. Pour sauce over chicken and allow to boil for 5 minutes. Toss chicken to coat in mixture.
  4. Reduce heat and simmer, uncovered for 15 minutes.
