Ingredients
- 2 medium zucchinis, sliced into fries
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko bread crumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup melted butter
Instructions
- Preheat the oven to 425°F.
- In a shallow bowl, mix together the flour, garlic powder, salt, and black pepper.
- Beat the eggs in another shallow bowl.
- In a third shallow bowl, mix together the panko bread crumbs, parmesan cheese, and parsley.
- Dip each zucchini fry into the flour mixture, then into the beaten eggs, and finally into the panko mixture, pressing to coat well.
- Place the coated zucchini fries onto a baking sheet lined with parchment paper.
- Drizzle the melted butter evenly over the fries.
