Crispy Garlic Parmesan Zucchini Fries

Ingredients

  • 2 medium zucchinis, sliced into fries
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 425°F.
  2. In a shallow bowl, mix together the flour, garlic powder, salt, and black pepper.
  3. Beat the eggs in another shallow bowl.
  4. In a third shallow bowl, mix together the panko bread crumbs, parmesan cheese, and parsley.
  5. Dip each zucchini fry into the flour mixture, then into the beaten eggs, and finally into the panko mixture, pressing to coat well.
