Delicious and Healthy Avocado Egg Salad Sandwich Recipe for Lunch
Ingredients:
- 4 hard-boiled eggs, chopped
- 2 ripe avocados, mashed
- 3 green onions, thinly sliced
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lime juice
- Salt and black pepper, to taste
- 8 slices whole grain bread
- Lettuce leaves, for serving
Directions:
- In a large bowl, mix together chopped hard-boiled eggs, mashed avocados, green onions, mayonnaise, Dijon mustard, and lime juice. Season with salt and black pepper, to taste.
- To assemble the sandwich, place lettuce leaves on one slice of bread, top with a generous amount of avocado egg salad, and cover with another slice of bread. Repeat with the remaining ingredients to make 4 sandwiches.
- Serve and enjoy!
