Delicious and Healthy Avocado Egg Salad Sandwich Recipe for Lunch

Avocado Egg Salad Sandwich

Ingredients:

  • 4 hard-boiled eggs, chopped
  • 2 ripe avocados, mashed
  • 3 green onions, thinly sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste
  • 8 slices whole grain bread
  • Lettuce leaves, for serving

Directions:

  1. In a large bowl, mix together chopped hard-boiled eggs, mashed avocados, green onions, mayonnaise, Dijon mustard, and lime juice. Season with salt and black pepper, to taste.
  2. To assemble the sandwich, place lettuce leaves on one slice of bread, top with a generous amount of avocado egg salad, and cover with another slice of bread. Repeat with the remaining ingredients to make 4 sandwiches.
  3. Serve and enjoy!
