Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 3 tbsp fresh lemon juice
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs mixed vegetables (such as carrots, potatoes, bell peppers, and zucchini), cut into bite-sized pieces
- 1 lemon, sliced
Instructions:
Preheat your oven to 400 degrees F.
