Delicious One-Pan Chicken and Vegetable Dinner Recipe
Ingredients
- 4 chicken breasts
- 1 red onion
- 2 bell peppers
- 2 zucchinis
- 2 cups cherry tomatoes
- 4 cloves of garlic, minced
- 3 tbsp olive oil
- 2 tsp dried basil
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and one teaspoon of dried basil and oregano each.
- Cut the red onion, bell peppers, and zucchinis into larger pieces than the chicken. Halve the cherry tomatoes.
- In a large mixing bowl, mix the vegetables, garlic, olive oil, one teaspoon of dried basil and oregano each, salt, and pepper.
- Spray a large baking sheet with cooking spray and arrange the chicken and vegetables evenly on the tray.
- Bake for 30 minutes, stirring halfway through, or until chicken is cooked through and the vegetables are tender.
