Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil, chopped (optional)

Instructions:

  1. Preheat oven to 400°F (204°C).
  2. Pound the chicken breasts to an even thickness using a meat tenderizer.
  3. Set up a breading station by placing the flour in one shallow dish, the beaten eggs in a second dish, and the breadcrumbs, parmesan cheese, garlic powder, salt, and pepper in a third dish.
  4. Dredge each chicken breast in the flour, shaking off any excess, then dip in the beaten eggs, and finally coat in the breadcrumb mixture.
  5. Heat the olive oil in a large skillet over medium heat. Add the breaded chicken and cook for 3-4 minutes on each side, or until golden brown.
  6. Transfer the chicken to a baking dish and top each breast with marinara sauce and shredded mozzarella cheese.
