- 1 pound rotini pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into small pieces

- 1 small onion, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until tender, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, then add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the onion and garlic to the skillet and cook until softened, about 3-4 minutes.
- Add the diced tomatoes and stir to combine. Cook for 2-3 minutes.
- Stir in the heavy cream and Parmesan cheese. Allow the sauce to simmer for 5-7 minutes, or until thickened.
- Add the cooked pasta and cooked chicken to the skillet and toss to combine. If the sauce is too thick, add a little pasta water to thin it out.
