Garlic Butter Shrimp with Linguine

Ingredients:

  • 1 pound raw shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup dry white wine or chicken broth
  • Salt and pepper to taste
  • 8 ounces linguine pasta
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated parmesan cheese
  • Lemon wedges for serving

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the linguine.
  2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and sauté for 2-3 minutes until pink and just cooked through.
  4. Add the white wine or chicken broth to the skillet and bring to a simmer. Cook for 1-2 minutes until the sauce has reduced slightly.
  5. Add the cooked linguine to the skillet with the shrimp and sauce. Toss everything together until the pasta is coated in the sauce.
  6. If the sauce seems too thick, add a bit of the reserved pasta water to thin it out. Season the dish with salt and pepper to taste.
  7. Divide the garlicky shrimp and linguine among four plates. Top with chopped parsley and grated parmesan cheese. Serve with lemon wedges on the side for squeezing over the pasta.

Notes:

This garlic butter shrimp with linguine recipe is versatile and you can easily switch out ingredients to your liking. Try using scallops or clams instead of shrimp, or adding some spinach or sundried tomatoes for extra flavor and nutrition.
