One-Pan Chicken and Vegetable Dinner

Ingredients:

  • 4 chicken breasts
  • 2 cups broccoli florets
  • 2 medium-sized potatoes, chopped
  • 2 medium-sized carrots, chopped
  • 1 medium-sized zucchini, chopped
  • 1 red onion, chopped
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 400°F.
  • In a small bowl, mix together olive oil, minced garlic, thyme, oregano, smoked paprika, salt, and pepper.
  • Place the chicken breasts in the center of a large baking dish and arrange the vegetables around them.
  • Drizzle the olive oil mixture over the chicken and vegetables, making sure everything is evenly coated.
  • Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
