Easy and Delicious One-Pan Chicken and Vegetables Dinner Recipe

Ingredients:

  • 4 boneless chicken breasts
  • 1 lb. baby carrots
  • 1 lb. red potatoes
  • 1 red onion
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 2 tsp Dijon mustard
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • Parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F.
  2. Wash and chop the baby carrots, red potatoes, and red onion into bite-sized pieces.
  3. In a small mixing bowl, whisk together olive oil, honey, Dijon mustard, minced garlic, salt, and pepper. Set aside.
  4. Place the chicken breasts in a large baking sheet and arrange the chopped vegetables around them.
