Ingredients

  • 1 ripe avocado, mashed
  • 2 slices of whole wheat bread
  • 4-6 slices of turkey breast
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Toast the bread slices until they’re nice and crispy.
  2. While the bread is toasting, prepare the avocado mash. In a bowl, mix together the mashed avocado, lemon juice, salt, and pepper. Set aside.
  3. Heat up the turkey slices over medium-high heat with a little bit of olive oil. Cook for 1-2 minutes on each side, until slightly browned and crispy.
  4. Top each slice of toasted bread with the avocado mash.
  5. Next, add the cooked turkey slices on top of the avocado mash.
  6. Finally, add the cherry tomatoes, red onion, and crumbled feta cheese on top of the turkey slices.
