Veggie Nachos

Ingredients

  • 1 bag of tortilla chips
  • 1 can of black beans, drained and rinsed
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced tomatoes
  • 1/2 cup of diced red onion
  • 1/2 cup of diced avocado
  • 1/2 cup of fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and diced (optional)
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 375 degrees.
  2. Spread the tortilla chips in a single layer on a baking sheet.
  3. Sprinkle the black beans, cheddar cheese, tomatoes, red onion, avocado, cilantro, and jalapeno pepper (if using) over the chips.
