Ingredients:
- 2 cups rolled oats
- 1/2 cup chopped nuts (almonds, walnuts, or pecans work well)
- 1/2 cup dried fruit (such as raisins, cranberries, or chopped apricots)
- 1/4 cup honey
- 1/4 cup peanut butter
- 1 tsp vanilla extract
- 1/4 tsp salt
Directions:
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine the oats, nuts, and dried fruit.
- In a small microwavable bowl, heat the honey and peanut butter for about 30 seconds until melted. Add the vanilla and salt, and stir to combine.
- Pour the honey mixture over the oats and stir until evenly coated.
