Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 lb. baby red potatoes, quartered
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tsp. Italian seasoning
  • Salt and pepper, to taste
  • 3 tbsp. olive oil
  • 1/4 cup grated Parmesan cheese

Instructions:

  • Preheat oven to 400°F (200°C)
  • In a large bowl, mix together the chicken, potatoes, broccoli, red pepper, garlic, Italian seasoning, salt, and pepper.
