Ingredients:
- 4 boneless, skinless chicken breasts
- 1 lb. baby red potatoes, quartered
- 2 cups broccoli florets
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 tsp. Italian seasoning
- Salt and pepper, to taste
- 3 tbsp. olive oil
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat oven to 400°F (200°C)
- In a large bowl, mix together the chicken, potatoes, broccoli, red pepper, garlic, Italian seasoning, salt, and pepper.
- Add olive oil and toss to coat everything evenly.
- Transfer the mixture to a large baking sheet or roasting pan.
