- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced

- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1/4 cup fresh parsley, chopped
Directions
- In a small bowl, combine the flour, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix well.
- Pound the chicken breasts to an even thickness. Coat each piece of chicken in the flour mixture, shaking off any excess.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, until golden brown. Transfer the chicken to a plate and set aside.
- Add the sliced peppers and onion to the skillet and cook for 4-5 minutes, until the vegetables are tender.
- Add the minced garlic to the skillet and cook for 1-2 minutes, until fragrant.
