Greek-Inspired Stuffed Chicken with Lemon and Feta

Ingredients:
- 4 chicken breasts
- 4 ounces feta cheese, crumbled
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh oregano
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, zest and juice
- 2 tablespoons olive oil
Directions:
- Preheat oven to 375°F. Lightly oil a baking dish.
- In a medium bowl, combine feta, parsley, dill, oregano, garlic, salt, pepper, lemon zest, and lemon juice. Mix well.
- Using a sharp knife, cut a pocket horizontally into the thickest part of each chicken breast. Be careful not to cut through the other side.
- Stuff each pocket with 1/4 of the feta mixture.
- Place the stuffed chicken breasts in the prepared baking dish. Drizzle with olive oil and sprinkle with additional salt and pepper if desired.
- Bake for 25-30 minutes, or until the chicken is cooked through and no longer pink.
- Serve hot with a side salad and crusty bread.
