A quick and simple marinade that turns out moist and tasty chicken!

Ingredients:

  • 1 cup Non-Fat Plain Greek Yogurt (I used Chobani)
  • 2 tabelspoons Olive Oil
  • 1/4 cup dry white wine
  • 4 cloves garlic, minced
  • 1/2 tabelspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • juice and zest of 1 lemon
  • 1/2 teaspoon salt
  • pepper to taste
  • fresh parsley, chopped rough
  • 3-4 pounds chicken, cut into 2 inch cubes
  • Sweet paprika (optional)

Instructions:

  1. Combine all of the ingredients, except the chicken, in a large bowl.
  2. Add the chicken and store to coat. Cover, or place in a large zip-tight gallon bag, and refrigerate for 30 minutes or up to 2 days.
  3. Skewer and grill until browned on all sides, about 3-4 minutes per side depending on the temperature of the grill.
  4. Sprinkle with sweet paprika (optional) and serve with lemon wedges and pita bread.
