Greek Yogurt Marinated Chicken
A quick and simple marinade that turns out moist and tasty chicken!
Ingredients:
- 1 cup Non-Fat Plain Greek Yogurt (I used Chobani)
- 2 tabelspoons Olive Oil
- 1/4 cup dry white wine
- 4 cloves garlic, minced
- 1/2 tabelspoon dried oregano
- 1 teaspoon crushed red pepper flakes
- juice and zest of 1 lemon
- 1/2 teaspoon salt
- pepper to taste
- fresh parsley, chopped rough
- 3-4 pounds chicken, cut into 2 inch cubes
- Sweet paprika (optional)
Instructions:
- Combine all of the ingredients, except the chicken, in a large bowl.
- Add the chicken and store to coat. Cover, or place in a large zip-tight gallon bag, and refrigerate for 30 minutes or up to 2 days.
- Skewer and grill until browned on all sides, about 3-4 minutes per side depending on the temperature of the grill.
- Sprinkle with sweet paprika (optional) and serve with lemon wedges and pita bread.
