Mediterranean Quinoa Salad with Grilled Chicken

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 4 chicken breasts, grilled and sliced

Instructions:

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover and simmer until the quinoa is tender and all the water is absorbed, about 15-20 minutes.
  2. In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, red onion, olives, feta cheese, parsley, and mint. Mix well.
  3. In a small bowl, whisk together the lemon juice, olive oil, honey, garlic, salt, and black pepper. Add to the salad and toss to combine.
  4. Grill the chicken breasts until cooked through, about 5-6 minutes per side. Slice the chicken and add to the salad.
  5. Serve the salad immediately or refrigerate until ready to serve.
