Mediterranean Feta & Mint Chicken
Ingredients:
- 1-1.5 lbs boneless, skinless chicken thighs
- 1 bunch fresh mint
- 4-5 ounces fresh feta cheese block, not crumbled; divided into equal slices (1 per thigh)
- 1 lemon
- 1 tbsp extra virgin olive oil
- 2 tsp Mediterranean spice blend
- salt
- pepper
