Quick and Delicious Lunch: Soba Noodles with Spicy Peanut Sauce
Ingredients:

  • 8 oz soba noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tbsp honey
  • 1 tbsp sriracha sauce
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
Directions:

  1. Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions.
  2. While the noodles are cooking, prepare the sauce. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha sauce, garlic, and water until smooth.
  3. Drain the cooked noodles and rinse under cold water to stop the cooking process. Drain again and transfer to a large bowl.
  4. Pour the peanut sauce over the noodles and toss to coat.
  5. Garnish with sliced green onions and chopped peanuts.
Note: This recipe makes about 4 servings. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
