Quick and Easy Avocado Chicken Salad Sandwich Recipe for a Satisfying Lunch

Avocado Chicken Salad Sandwich

Ingredients:

  • 2 cups cooked and shredded chicken breast
  • 2 ripe avocados
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 6 slices bread (whole wheat or white)
  • 6 leaves of lettuce (optional)

Note: You can use leftover chicken, canned chicken, or rotisserie chicken for this recipe.

Instructions:

  1. In a large bowl, mash the avocado with a fork until smooth.
  2. Add the Greek yogurt, lime juice, red onion, cilantro, salt, and pepper. Mix well.
  3. Add the cooked chicken and mix until well combined.
  4. Toast the bread slices and place a lettuce leaf (if using) on each slice.
  5. Divide the chicken salad among 3 slices of bread and top with the remaining slices.
  6. Cut each sandwich in half and serve.

This recipe makes 3 sandwiches, but you can easily adjust the ingredients to make more or less.
