Quick and Easy Avocado Chicken Salad Sandwich Recipe for a Satisfying Lunch
Ingredients:
- 2 cups cooked and shredded chicken breast
- 2 ripe avocados
- 1/4 cup plain Greek yogurt
- 2 tablespoons lime juice
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
- 6 slices bread (whole wheat or white)
- 6 leaves of lettuce (optional)
Note: You can use leftover chicken, canned chicken, or rotisserie chicken for this recipe.
Instructions:
- In a large bowl, mash the avocado with a fork until smooth.
- Add the Greek yogurt, lime juice, red onion, cilantro, salt, and pepper. Mix well.
- Add the cooked chicken and mix until well combined.
- Toast the bread slices and place a lettuce leaf (if using) on each slice.
- Divide the chicken salad among 3 slices of bread and top with the remaining slices.
- Cut each sandwich in half and serve.
This recipe makes 3 sandwiches, but you can easily adjust the ingredients to make more or less.
