Korean-inspired beef bowl

Ingredients:

  • 1 lb. ground beef
  • 1 tbsp. vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp. soy sauce
  • 1/2 tbsp. brown sugar
  • 1 tsp. ginger, grated
  • 2 green onions, sliced
  • 4 cups cooked rice

Instructions:

  1. Heat a large skillet over medium-high heat and add the vegetable oil. Once hot, add the ground beef and cook until browned and cooked through, about 5-7 minutes.
  2. Remove the beef from the skillet and set it aside. In the same skillet, add the sliced red bell pepper, sliced yellow onion, and minced garlic, and cook until the vegetables are tender, about 5 minutes.
  3. In a small bowl, mix together the soy sauce, brown sugar, and grated ginger. Add the beef back to the skillet, along with the soy sauce mixture. Cook for an additional 2-3 minutes, until the beef is coated in the sauce.
  4. Garnish with sliced green onions and serve over cooked rice.
