Ingredients
- 1 lb. boneless, skinless chicken breasts, sliced
- 1 lb. penne pasta
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp. butter
- 1 tbsp. minced garlic
- 1 tsp. salt
- 1 tsp. black pepper
- 2 tbsp. chopped fresh parsley, for garnish (optional)
Instructions
- In a large pan or skillet, melt the butter over medium-high heat. Add the sliced chicken and cook until browned on both sides, about 5 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the garlic and cook until fragrant, about 1 minute. Add the chicken broth, heavy cream, pasta, salt, and black pepper to the pan and stir well to combine.
- Cover the pan and bring the mixture to a boil. Reduce the heat to low and simmer for about 15 minutes, or until the pasta is cooked to your liking and most of the liquid has evaporated.
- Stir in the Parmesan cheese and reserved chicken, and cook for another 2-3 minutes, or until the cheese is melted and the chicken is heated through.
