One-Pan Chicken Parmesan

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1 tablespoon olive oil
  • 3 cups marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil for garnish

Instructions:

  1. Preheat the oven to 375°F.
  2. Season the chicken breasts with salt and pepper to taste.
  3. In a shallow dish, combine the breadcrumbs, Parmesan cheese, and flour.
  4. Dip each chicken breast in the beaten eggs, then coat in the breadcrumb mixture, pressing the mixture onto the chicken to help it adhere.
  5. In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.
  6. Add the chicken breasts and cook for about 3-4 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  7. Add the marinara sauce to the same pan, scraping up any browned bits from the bottom of the pan.
  8. Place the chicken breasts back in the pan, spooning some of the sauce over the top of each breast.
  9. Sprinkle shredded mozzarella cheese over each chicken breast.
  10. Transfer the pan to the oven and bake for 20-25 minutes until the cheese is melted and the chicken is cooked through.
  11. Garnish with chopped fresh basil and serve hot.
