Roasted Chicken with Lemon and Herbs

Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 2 lemons, sliced
  • 4-5 cloves of garlic, minced
  • 1/4 cup fresh herbs (thyme, rosemary, parsley), chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Remove giblets and excess fat from the chicken cavity and pat it dry with paper towels.
  3. In a small bowl, mix together minced garlic, chopped herbs, olive oil, salt, and pepper.
  4. Spread the herb mixture all over the chicken, both under the skin and on top.
  5. Place lemon slices under the skin and on top of the chicken.
  6. Tie the legs together with kitchen twine and tuck the wing tips under the bird.
  7. Place the chicken on a roasting pan or a baking dish, and roast in the oven for 50-60 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (75°C).
  8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
