Ingredients
- 1 package of spring roll wrappers
- 1 cup of thinly sliced carrots
- 1 cup of thinly sliced cucumber
- 1 cup of thinly sliced red bell pepper
- 1 cup of chopped romaine lettuce
- 1/2 cup of chopped fresh cilantro
- 1/2 cup of chopped fresh mint
- 1/2 cup of chopped peanuts
- 1/4 cup of soy sauce
- 1/4 cup of rice vinegar
- 1 tablespoon of honey
- 1 tablespoon of sesame oil
- 1 teaspoon of grated ginger
Instructions
- In a bowl, combine the soy sauce, rice vinegar, honey, sesame oil, and ginger to make the dipping sauce.
- Place a spring roll wrapper on a flat surface and add a small amount of each vegetable and herb in the center.
