Ingredients

  • 1 package of spring roll wrappers
  • 1 cup of thinly sliced carrots
  • 1 cup of thinly sliced cucumber
  • 1 cup of thinly sliced red bell pepper
  • 1 cup of chopped romaine lettuce
  • 1/2 cup of chopped fresh cilantro
  • 1/2 cup of chopped fresh mint
  • 1/2 cup of chopped peanuts
  • 1/4 cup of soy sauce
  • 1/4 cup of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of sesame oil
  • 1 teaspoon of grated ginger

Instructions

  1. In a bowl, combine the soy sauce, rice vinegar, honey, sesame oil, and ginger to make the dipping sauce.
  2. Place a spring roll wrapper on a flat surface and add a small amount of each vegetable and herb in the center.
